30-Minute Salmon Foil Packets with Tomatoes and Basil is a quick and healthy main for a weeknight dinner!
Want a lower sodium simple salmon recipe? Try these salmon foil packets for your next salmon night! This main dish is Mediterranean and DASH Diet friendly so this is great to make for your family members who are trying to lose weight, eat a heart healthy diet or manage high blood pressure. It is recommended you get two servings of fatty fish (salmon, cod, sardines, tuna) per week so eat up!

This recipe makes 2 servings of salmon but you can easily adjust it for more. Make sure to wrap each piece of salmon in its own foil packet so they steam well and absorb some juices from the wilted tomatoes. I paired my Salmon Foil Packets with Tomatoes and Basil with 1/3rd cup of quinoa and steamed green beans. You can pair your salmon with any whole grain or starchy vegetable and a serving of non-starchy vegetables to balance your dinner with protein and fiber!
DASH diet focuses on eating fish and other lean non-processed proteins, whole grains, and increasing fruit and vegetable intake to help increase potassium intake and lower sodium intake because your fruits and vegetables are naturally no sodium foods. This salmon recipe goes perfectly along with DASH diet principles and is a great example of how you can eat healthier meals at home that are easy and delicious!
Salmon is one of the best sources of omega-3 fatty acids, specifically EPA and DHA, which support heart and brain health. Omega-3s help reduce inflammation, lower blood pressure, decrease triglycerides, and may even lower the risk of heart disease. You should try to eat 2 servings of fatty fish per week and this is an easy recipe to help you meet your dietary recommendations! Read below to see how to make it!
Your List of Ingredients
2 4-oz pieces of salmon
4 tsp olive oil
1 cup cherry tomatoes, halved
30 basil leaves

Instructions:
Step 1:
To make the foil packets rip foil into pieces big enough to make a packet that is big enough to hold a 4 oz piece of salmon and 1/2 cup cherry tomatoes and not let any of the juices run out. You want to make sure you have enough foil so the packet can be closed well enough so juices and steam do not escape.
Step 2:
Rub 1 tsp olive oil in base of foil packet. Add 1 piece of salmon to each foil packet. Rub an additional 1 tsp olive oil on the top of each salmon piece. Lightly salt and pepper each piece of salmon. I go heavy on the pepper, light on the salt!

Step 3:
Put PLENTY of fresh basil leaves and halved cherry tomatoes in each foil packet. The more the merrier! I always wish there are more tomatoes to eat when I make this dish. So don't hold back!
Step 4:
Close each packet tightly so salmon will steam in the packet. Put in oven on 450 for 25 mins or until salmon and tomatoes have reached your desired doneness.
Step 5:
Serve with whole grain OR starchy vegetable, and extra non-starchy vegetable for a DASH and Mediterranean diet friendly dinner!
